Yesterday I found what I've spent ages searching for: smoked salmon that hasn't been cured in blinkin sugar ..yaaaay! Just oak smoked salmon...no nasties. After a late return home I struggled for inspiration so landed on a simple, quick omelette, and it hit the spot perfectly!

Yesterday I found what I've spent ages searching for: smoked salmon that hasn't been cured in blinkin sugar ..yaaaay! Just oak smoked salmon...no nasties. After a late return home I struggled for inspiration so landed on a simple, quick omelette, and it hit the spot perfectly!

Ingredients

  1. 3organic eggs whisked
  2. 1 tablespoonplain greek yoghurt
  3. Salt/pepper/ italian mixed herbs to season
  4. 50 goak smoked salmon (check no added sugar or 'cured')
  5. 3/4chestnut mushrooms thinly sliced
  6. Handfulshredded kale (stalks removed) or spinach
  7. 1 tspolive oil
  8. Heat oven to 180 degrees

Cooking Instructions

    Add yoghurt to eggs, season and beat together. For an extra fluffy omelette separate the yolks and whites, beat whites to a firm peak and gently fold into the mix

    Heat oil in a mid-size oven safe frying or saute pan on a medium heat

  3. 3

    Saute mushrooms and kale until softened...around 5 mins

  4. 4

    Add beaten eggs and swirl the mixture to ensure it's evenly distributed around the pan

  5. 5

    Place pan in oven for 5 mins (if it's not an oven safe pan you could use the grill on a low/medium heat instead, and leave door ajar and pan handle outside)

    Remove pan after 5 mins (carefully as handle will be hot!), scatter with torn pieces of smoked salmon and pop back into oven for 2/3 more mins

    Done 😃
