Vermicelli upma is loaded with vegetables and flavored with Indian spices. It's a quick and easy vegan recipe that can be served for any meal of the day and can be made in just few minutes. Easy to pack and carry in your lunchbox too!

Heat a pan and add vermicelli to it. Dry roast until the vermicelli turns golden brown. Keep on stirring in between to avoid burning.

In a pan heat oil. Add mustard seeds, cumin seeds and urad dal. Roast it on very low flame. Add asafoetida, green chillies and curry leaves. Saute for a min.

Add onions and cook till they turn translucent.

Now add vegetables. Cook covered for 5 minutes.

Add roasted vermicelli and mix well. Add ginger chilli paste and salt.

Add boiling hot 3 cups of water and cook covered.

After 10 minutes, switch off the stove and don't remove the lid for at least 2 minutes. After 2 minutes, remove the lid and fluff vermicelli with a fork.
Add chopped coriander leaves and lemon juice. Mix. Enjoy!
