Easy Korma Curry

Ingredients

4-6 servings
  1. (Sauce in Blender)
  2. 1Onion (chopped in half)
  3. 1/4 cupCashews
  4. 1 pieceginger (peeled)
  5. 3 clovesgarlic
  6. (Spice mix in bowl)
  7. 3 TSPTurmeric powder
  8. 2 TSPGaram Marsala
  9. 1/2 TSPCurry powder
  10. 1/2 TSPCoriander powder
  11. 1/2 TSPCardamom powder
  12. 1/2 TSPSalt
  13. 1/2 TSPBlack pepper
  14. 1/2 TSPCinnamon powder
  15. 1/4 TSPRed chili powder (add as much as you like)
  16. (Ingredients in Skillet)
  17. 2Roma Tomatoes (chopped)
  18. 1/4 CupYogurt
  19. 1/4 CupHeavy Cream or Coconut Cream
  20. 3/4 CupFrozen mix vegetables

Cooking Instructions

    Prepare the sauce by putting the onion, garlic, ginger, cashews in the blender and puree until smooth. Set aside.

    Prepare the spices, In a bowl add Turmeric, Garam masala, Curry powder, Coriander powder, Cardamom powder, Salt, Black pepper, Red chili powder and Cinnamon powder. Mix well and set aside.

    Take out a large skillet turn heat to medium. Put 2 TSP cooking oil and warm in pan. Once the pan is hot add in the sauce from the blender. Cook for a minute or two. Now add in the spice mixture and cook until fragrant (3-4 minutes)

    Now add in the chopped tomatoes, mixed veggies, heavy cream or coconut cream, yogurt and mix well. Now cover with lid and simmer for 10 minutes.

    Next remove the lid and simmer for another 5 minutes and now it's done.
