Heat a pot with both ghee and oil at first. Shallow fry Mutton cubes a bit for 3-4 minutes.

In the same pot, throw in the cumin seeds, dry chilies, cloves, cardamoms, cinnamon sticks, ginger, garlic, and chopped coriander now.

Add chopped onions and saute for a minute or two before adding the tomatoes and the rest of the spices. After cooking for about 10 minutes, blend into a puree along with cashewnuts.

After done, stir in the cooked mutton cubes. Sprinkle garam masala, and add both chopped coriander and Kasuri methi. Do not forget to stir in the fresh cream too. Mix well and cook for 2-3 minutes more before switching off the flame.

Garnish with more fresh cream, chopped coriander, and Kasuri methi before dishing it out. Enjoy! Serve to pipe hot with Cumin Rice and Naans.
