Vavo's Blackened Cajun Ribeye

Ingredients

  1. 2Boneless Ribeye, 2" thick for best flavor
  2. 1 cubebutter
  3. 2 TBSPrendered duck fat
  4. Cajun Rub
  5. 3 TbspSmoked paprika
  6. 3 TbspCoarse Kosher Salt
  7. 3 TbspGranulated Garlic
  8. 2 Tbspground white pepper
  9. 3 TbspSlap ya Mama seasoning
  10. 3 TbspHidden Valley Ranch Seasoning mix
  11. 1 Tspground Thyme
  12. 1 Tspground Oregano
  13. 1 Tspground Basil

Cooking Instructions

    In a 9x9 baking dish, whisk all the ingredients together for the rub

  2. 2

    Melt butter in a skillet on low heat, do not cook butter!

  3. 3

    Dip one steak at a time in the butter until covered thoroughly

  4. 4

    Dredge the steaks in the rub until covered thoroughly

  5. 5

    Place each steak individually in a one gallon bag, or use food saver to vacuum seal, Add a leaf or a sprig of basil to garnish the steak before sealing bag.

    Put in the refrigerator and let marinate for 48 hours

  7. 7

    Remove from the fridge at least an hour before cooking, allow meat to reach room temp

  8. 8

    Heat rendered duck fat in a cast iron skillet until "white hot" and carefully add meat, searing each side until blackened, about 5 - 6 minutes per side depending upon how hot your skillet is

    Remove from Skillet and tent in tin foil for 15-20 minutes, serve hot!
