Ingredients

2 hours
4 people
  1. 2 cupsflour
  2. 2 tbspbutter
  3. 2 cupsminced meat
  4. 2medium sized Irish potatoes
  5. 2large carrots
  6. 1bulb of onions
  7. Stock cubes(to taste)
  8. Salt(to taste)
  9. Peppers (One large bell and 6 habanero)
  10. 2 tbspvegetable oil
  11. 1 tbspbaking powder
  12. 1egg
  13. Water

Steps

    FOR THE DOUGH
    Sift the flour and baking powder in a bowl and add a pint of salt if desired

  2. 2

    Add the butter and mix till it forms crumbs

  3. 3

    Add the water and mix till it forms a thick dough.

  4. 4

    Keep aside to rest.

  5. 5

    FOR THE FILLING
    Boil the potatoes and carrots and chop into desired sizes.
    Note :not too large or the dough will strip open while filling.

    In a pan add the oil and let it heat.

  7. 7

    Add the onions and let it fry till it's golden brown.

  8. 8

    Add the peppers and let to sauté

  9. 9

    Add the potatoes,carrots,minced meat,stock cubes and salt and mix properly.
    Note:If the filling is too thick add a little water and if it's too watery mix flour with water and add to the mixture.

    PREPARATION
    On a flat surface sprinkle flour and roll the dough to a semi thick size.

  11. 11

    Use a circle cutter to cut out as many circles as possible.

  12. 12

    Put the filling in the center of the dough.
    Note: Don't put in too much.

  13. 13

    Join the two edges of the circle together and press down with a fork to form the crust.

  14. 14

    Put on an oiled baking tray or parchment paper.

  15. 15

    Break the egg and whisk

  16. 16

    Use a brush and apply the egg on the pies

  17. 17

    Bake on low heat for 30 minutes

  18. 18

    Serve hot...
