Add color to your food: Pickled Onion 🌈

For the last 3 months, I've been obsessed with pickled onions. I thought it was difficult and time consuming to make. But, it's not. I'm not pickling onions in a big jar, rather prepare it to consume it in the next day. I have this tiny plastic storage cup that I use for pickling onions. Enjoy this as a topping to your favorite tacos or salads.

You can keep this in the fridge up to 2 days (based on my research).

Ingredients

  1. 1/2red onion
  2. White vinegar
  3. 1 teaspoonHoney with ginger (used this because I had it home) or Honey
  4. Salt
  5. Black pepper

Cooking Instructions

    Slice the onions thinly. You can do it with a knife if you trust your chopping skills. Alternatively you can use a mandoline slicer.

    Once you have the onions sliced and ready, put them on a cutting board and put 1-2 tbsp of salt. Then massage onions with salt for 3 mins. While you're massaging the onions squeeze the excess juice. Onions should feel somewhat slimy.

    Once onions are ready transfer them into the jar you like and add the vinegar and honey. I usually add vinegar and put vinegar to the point where onions are swimming. Mix the honey and make sure it dissolves in vinegar

    Add black pepper, close the lid

    If you really like them to be pickled, I would say wait for couple hours. But, if you're impatient like me, you can have them right away!
