Peel and grate the potatoes using the large holes of a grater. Rinse twice or thrice then dip in chilled water along with ice cubes. This helps to remove excess starch from potatoes.

Squeeze out the entire water in a sieve or a muslin cloth. Wrap in a paper towel and press to remove excess moisture. Place shredded dry potatoes in a bowl. Mix in onion, finely minced garlic, all the flours as needed, whisked egg, chopped green chilies, chili flakes, coriander, black pepper powder, and salt to taste.

Combine everything together. Do not add water. Grease a non-stick snack pan with oil, butter, or clarified butter. The shredded potatoes along with the binding agents like flour and egg as well as other seasonings are formed into either large or small pancake-like hash browns. Press with the back of a spoon and flip when one side is done. These are shallow fried until both sides turn golden brown in colour.

Season with a sprinkling of pepper,1 finely chopped green chili and chopped coriander. Serve hot immediately in breakfast with tomato ketchup or a dip of choice along with buttered toasts, poached eggs, and a cup of tea.
