Peruvian cacao powder, unsalted butter and fresh farm eggs, a few drops of lemon, vanilla extract, drop of honey or sugar, and a whisk is all it takes to make this surprise dessert in advance of a festive dinner.

Whisk eggwhites with lemon juice and honey or sugar till fluffy, set aside.

Whisk unsalted molten butter with cacao powder and vanilla extract in warmed bowl in double boiler, then whisk in egg yokes till smooth.

Fold eggwhites into chocolate egg yokes, cool 15 minutes in freezer, put in dessert glasses and serve.
