Mediterranean Roasted Veggies is a healthy and tasty recipe with simple and easy preparation.

Wash and chop veggies, slice onion, red and yellow bell pepper/capsicum, tomatoes chop brinjal, and zucchini in rounds.

Heat oil in a pan add garlic fry for a while then add onions both capsicum and cook till soft add salt and pepper.

Then spread the prepared mixture in a greased baking dish, then arrange the brinjal, zucchini rounds tomatoes alternatively.

Place the dish in preheated Kadai sprinkle salt pepper, herbs oregano, thyme, and olive oil, and cook for 35min on medium heat. 10 minutes before completing add some bread crumbs, cheese chilli flakes, and herbs over and continue cooking till the cheese melts.

Mediterranean Roasted Veggies ready to serve as a side dish with chickpea patties and rice.
