Phirni also called as firni is a classic slow-cooked Indian sweet pudding made with basmati rice, milk, nuts, sugar and scented with cardamom powder or saffron or rose water.
Steps

Boil milk in a heavy-bottomed pan. When the milk boils Add saffron strands and cardamom powder and mixes well.

Now add sugar and keep stirring and cook on low flame for 4-5 minutes.

When the milk is boiling, add the corn flour-custard powder-water mix while stirring the milk on a low flame.

Cook on low flame while stirring to avoid the formation of lumps.

Now add Khoya, then mix, add cream, mix it, add condensed milk, and mix well. Then let it come to room temperature.

When rabdi malai is cool, garnish it with chopped almonds and pistachio.

Your yummy Kashmiri firni is ready to Serve.
