Stir fried mediterranean vegetables cooked together with chickpeas, tomato sauce and herbs to form a super simple, satisfying and healthy plant-based recipe is a good option of weekend dinner.
Steps

Soak Chickpeas overnight and then boil with water and 1/2 tsp salt.

Heat coconut oil in a pan and put thin slices of garlic.

Add and toss prepped veggies with some sea salt and black pepper.

Add dried herbs and roast until vegetables are soft and fragrant.

Once done, add boiled chickpeas in it and cook on medium heat.

Add tomato sauce and eason as needed with additional herbs and allow to simmer for about 5 minutes.

Switch off the heat and serve.
