Vitantonio Recipe - Tapioca Lemon Egg Cake (Ji Dan Gao) (檸檬珍珠脆皮雞蛋糕)

Egg Cake (雞蛋糕 Ji-Dan-Gao) is a famous street food in Taiwan. This time we give a twist to egg cake by making a lemon cake version and add some tapioca to enrich the texture and flavor.

Preheat the Vitanotio maker. Lemon zest and lemon juice.

In a mixing bowl, combine Crispy Egg Cake Premix, whole egg, milk, vegetable oil, lemon zest, and lemon juice, mix unitl smooth.

Pour the batter into the mold until 1/3 full. Place 8 pcs of tapioca on top of the batter and pour the batter into the mold again until it reach the top of the mold. Cover the maker and heat for 3 1/2 mins.

To make lemon icing, place icing sugar, lemon juice, and lemon zest in a small mixing bowl. Mix the icing until smooth.

To finish, dip the cooked egg cake in the lemon icing.
You can use some lemon zest or candied lemon strips for decoration (optional). - 6
Tips
1.Use doughnut tray for this recipe. (60g of batter for each tray)
2. Each tray can make 6 pcs of egg cakes. This recipe yields 18 pcs egg cakes.
