Pambazos Poblanos

I had a leftover pambazo roll, so I wanted to use it to make a different version. This is actually the first time I’ve tried a poblano pambazo, and I highly recommend it! It reminded me a bit of a hamburger but with a Mexican twist. It’s absolutely delicious! I also used the pambazo sauce I had made to season the meat and brush the bread.

Steps
- 1
Spray a skillet with a little nonstick cooking spray. Add the onion and crumbled chorizo or longaniza, and sauté for a few minutes until the onion is translucent.
- 2
Add the ground beef and cook until it changes color. Then add the pambazo sauce. (It’s very easy to make; you can find the recipe in my collection.) Reserve a little sauce for the bread.
- 3
Brush half of the roll with the reserved sauce. Fill it first with the meat, then add the lettuce, and finally the avocado. If you can’t find pambazo rolls, you can make them at home. (I’ve linked the recipe in my collection.)
