Grease your cake pan mold with butter and dust with flour, then set aside.

In a large mixing bowl, add your flour, baking powder, salt and lemon zest. Whisk and set aside.

In a separate bowl, add butter and sugar. Beat until light and fluffy. Add the eggs individually and mix after each egg is added. Continue mixing thoroughly.

Add 4tbsp lemon juice, vanilla extract and mix once again.

Add half of the flour mixture from earlier and mix until well combined. Pour in 1/2 cup of buttermilk and continue mixing.

Add the remaining half of the flour mixture and another 1/2 cup buttermilk. Then beat until well combined. Scrape the side of bowl.

Pour the batter into the greased cake mold and spread evenly.

Preheat your oven, and bake for 30-45mins or until a toothpick inserted into the center comes out clean. (I baked mine in two batches). Let it sit and cool for 30mins.

For the glaze, add one cup of powder sugar, 3tbsp of lemon juice and mix until smooth.

Pour glaze onto the loaves cakes. Best serve after 1 hour in fridge.
