Preheat oven to 220°C and grease 2 large baking sheets.

Season the chicken to taste with salt and pepper and arrange 4 thighs in the middle of each of the baking sheets.

Combine the rest of the ingredients in a large bowl and mix through using your hands.

Arrange the vegetables in a single layer around the chicken portions on the baking sheets, making sure that the vegetables do not touch the chicken.

Bake about 40 - 45 minutes or until the chicken is cooked through and the vegetables are tender.

Serve immediately.
