Cut chicken into 2 inch prices and season with salt and pepper

Add ginger and garlic to a bowl with the sake soy sauce and sesame oil. Whisk together

Add chicken to the bowl and mix. Then let refrigerate for 30 mins

Pour oil and heat to 325 f

Set up dredge of flower. Dip chicken then dip in the potato starch remove excess flour and starch

Fry at 325 for 90 secconds. Remove and second fry at 350 for 45 seconds
