Broccoli Soup with Orzo and Feta

The temperature is dropping, the air is getting cooler, and fall has finally made its appearance. This means it's time for an antioxidant-rich and super nutritious soup that's perfect for now and for winter!!
Hearty, delicious, and very quick to make!!👍
Ideal for those who can't eat plain broccoli, like me 🤷♀️😉, and for kids who usually don't want it at all!!
Broccoli Soup with Orzo and Feta
The temperature is dropping, the air is getting cooler, and fall has finally made its appearance. This means it's time for an antioxidant-rich and super nutritious soup that's perfect for now and for winter!!

Cooking Instructions

Wash and cut the broccoli into florets.
In a pot, add the water, broccoli, olive oil, chicken bouillon, minced garlic, season with salt and pepper, and boil for 5 minutes until slightly softened.
(If you want it softer, leave it for another 5 minutes). - 2
Then, using a potato masher, mash them a bit.
If you like, leave some larger and smaller pieces.
Add the orzo and boil for another 15 minutes.
Check if you need to add a little more hot water.
Stir to prevent the orzo from sticking. - 3
Once ready, add the lemon juice, stir, and add the feta broken into pieces.
Stir and taste to see if anything needs to be added. - 4
Serve with a little olive oil, red pepper flakes, and croutons.
Enjoy with your loved ones.
