Roast lotus seeds in 1 tablespoon melted ghee on a microwave-safe bowl, 2mins. Or roast lotus seeds in ghee in heavy pan over low heat, 2 min. Take out. In the same pan, fry cashews and raisins in 1 tbsp melted ghee. for 1-2 minutes turn off the heat when cashews turn golden and raisins swell. Take them out keep, separately

In the same pan, boil the milk over medium heat.
(*I boil the milk in the milk cooker and then add it to the saucepan. Do as per your convenience). Lower the fire. Let it boil a few more minutes and thicken a little. Add the roasted lotus seeds, Stir and add saffron; 5 more minutes on the stove The color of milk is yellow. Add molasses or brown sugar, cardamom powder and stir. lower the fire. Let the milk simmer for another 15 minutes. - 5
Let 8 cups of milk be reduced to is 6 cups. Add cashews and
raisins.
Beautifully colored, richly flavored payasam is ready. Taste. transfer to a serving bowl and serve
