In a shallow bowl, whisk the egg with a little plant-based milk.

Add pumpkin pie spice or mixed spice to taste.

Cut two thick slices of bread.

Soak the bread slices in the egg mixture until fully absorbed.

Cook the bread slices in a hot skillet for about 2 minutes on each side until golden brown.

Dice the pear and slice the fig into rounds.

Cook the diced pear with a little honey and spice until softened.

Quickly sear the fig slices in the skillet.

Assemble everything on a plate and top with a few blanched almonds and a drizzle of honey.
