Nopal Patties with Dried Shrimp

Chop 6 to 8 nopal cactus pads and cook them in water with salt and a pinch of baking soda to help keep their green color. Drain them, then add dried shrimp that have been soaked in hot water, cleaned, drained, and chopped. Sprinkle 1 tablespoon of flour over the mixture.

In a separate bowl, beat two egg whites until stiff peaks form, then gently fold in the yolks. Carefully mix in the nopales and dried shrimp. In a skillet with enough oil, drop spoonfuls of the mixture to form patties. Fry until golden, then remove and drain on paper towels. You can serve them with a green tomato sauce made by boiling 8 tomatillos (with husks removed) with 1 clove of garlic, a small piece of onion, cilantro to taste, and 1 green chili pepper (optional). Blend the mixture, add salt, and cook over heat.

Tip: To make all the patties the same size, use an ice cream scoop.
