Ingredients

4 servings
  1. 1 rackbeef ribs
  2. 1 (16 oz)can of tomatoes
  3. 1 cantomato paste
  4. 1 tbspKirkland brand sweet mesquite seasoning
  5. 1 tbspItalian spice
  6. 1 tspdry mustard
  7. 1 tspcayanne pepper
  8. 1 tbspminced garlic
  9. 1/4 cupcoconut sugar
  10. Pinchsalt
  11. Pinchpepper
  12. 5carrots chopped
  13. 2 stalkscelery chopped
  14. 1large onion chopped
  15. 1 tbspolive oil

Steps

  1. 1

    Preheat oven to 220 degrees.

  2. 2

    Toss carrots, celery and onion in the bottom of a roasting pan.

  3. 3

    Brush olive oil on both sides of the beef ribs and place them on top of the vegetables in the roasting pan.

  4. 4

    Lightly season beef ribs on both sides with salt and pepper.

  5. 5

    Using a blender, blend the can of tomatoes, tomato paste, rest of the spices and garlic.

  6. 6

    Pour mixture over top of the meat.

  7. 7

    Place cover over top of the roasting pan and roast in the oven for 5-6 hours.

  8. 8

    Remove the ribs from oven and let sit for 5 minutes.

  9. 9

    Serve over mashed potatoes or rice.
