First wash sponge gourd. Then peel it and cut into small pieces. Once it is done. Then keep aside. Mean while in a bowl add 1/2 tsp haldi powder, 1 tsp dhania powder, cumin powder, red chilli powder mix it with water and keep aside.

Now in a kadai. Heat oil as needed. Fry cumin seeds, mustard seeds, few curry leaves and 1 dry red chilli for few seconds. Then fry 1 chopped onion till it is light brown color Once it is done then add vegetables and saute it for few minutes. Then add prepared masala. Mix..it well...

Then add water as needed. Add sambar powder. If you add sambar powder. It will gives nice aroma and even it will be tasty also. Then cover and cook till the vegetables coo well.

Once it is done. Sprinkle chopped dhania leaves. Now it is done. Then transfer to a serving plate.

Ready to serve....with hot.phulkas.I love to eat with phulkas...
