Stuffed Onion Rings
We picked up this recipe from our son. It’s fairly simple and super delicious! It’s a great side dish and also works as a stand alone appetizer. It only takes about ten minutes to cook the rings, but the rings requires another 30 minutes of prep (including 20 minutes of time in the freezer).

We picked up this recipe from our son. It’s fairly simple and super delicious! It’s a great side dish and also works as a stand alone appetizer. It only takes about ten minutes to cook the rings, but the rings requires another 30 minutes of prep (including 20 minutes of time in the freezer).

Slice the onion in 1/2” thick rings and separate onto a cutting board.

Combine the cream cheese, grated cheese, green onions, and bacon bits (use according to taste) into a large mixing bowl and mix.

Layout a small baking sheet with parchment paper. Fill each onion ring with the cream cheese mixture, and place it on the parchment paper.

Once full, put the baking sheet in the freezer for 20 minutes to firm up the onion ring and filling for the egg wash.

Remove the onion rings from the freezer. Crack two eggs into a medium size bowl and beat them senseless 😂 Pour bread crumbs into a second bowl about the same size. Repeat the following steps for each onion ring:

1. Take an onion ring and give it a bath in the egg bowl.
2. Remove it, and place it in the bread crumb bowl, covering it completely (flipping it helps).
3. Return the onion ring back to the egg bath and cover it with egg again.
4. Return it to the bread crumb bowl and cover it a second time.

Trying not to put too much time before frying these, finish all the onion rings (you made need a third egg to finish) and set them next to the stove. Pour some vegetable oil into a large frying pan and turn burner to medium-low. Let the oil warm up.

Place 5-7 rings in the pan at a time. Fry them until there are golden brown on both sides. You can turn your oven to 175° if you want to keep them warm until you finish them all.

Serve with another dish or use a great appetizer!
