Kathyawadi Dungri Bateta Nu Shaak (Potato Onion Curry) !!

Peel and dice potatoes and onions. Wash properly and soak in enough water.

Heat oil in a pressure cooker. Add mustard seeds and hing. Let it crackle. Add ginger garlic paste, mix and cook for a minute.

Further add diced potatoes, onions, turmeric powder, red chilli powder, dhania jeera powder, salt and garam masala. Mix everything well and add 1/4 cup water.

Mix and cook for a minute or two. Cover the pressure cooker with lid and cook for 3 whistles. Switch off the flame and let it cool down till pressure releases. Open the lid. Add chopped fresh green coriander leaves and mix.

Serve hot with Roti or Paratha along with rice, dal or Khichdi and Kadhi.
