CACIO E PEPE EGG’WICH

There is no need to fret over this fancy, mouthful name. It is nothing but humble cheese and pepper scrambled egg sandwich!
“Cacio e Pepe” is Italian for “Cheese and Pepper”.
This sandwich is not fancy. It doesn’t require a lot of time, special skills or rare ingredients. It is a substitute for the classic Egg Sandwich served with afternoon tea. This sandwich is for breakfast. You can have it as a snack also. When it comes to egg sandwiches, there are no rules as to when to have them!

Whisk together eggs, cream, salt and freshly ground pepper.

Heat a skillet over medium heat and melt about 2 tablespoon butter.

Add the egg mixture, stirring frequently till eggs are set, soft curds have formed

Add the cheese and cilantro and mix. Remove and set aside, keeping it warm.

Spread remaining butter on slices and, if desired, toast.

Spread the scrambled eggs over one slice, sprinkle with some ground pepper and chilli flakes.

Place the other slice over the eggs and enjoy!
