Baked Oysters with White Sauce

In Melbourne where I live, Oysters are pricy, they are rather small, and always available on the half shell to be eaten raw. But, you know what? When we purchase them from shops, they are not super fresh any more and they often smell fishy. I don’t like to eat those Oysters raw. These Baked Oysters are very popular in Japan and actually one of my favourite ways to eat Oysters. Australian people don’t cook Oysters like this. It is super easy to prepare. Cover the Oysters with White Sauce and some Cheese, then bake them. Doesn’t it sound easy and yummy?

Preheat Oven to 200℃.

Make White Sauce. Melt Butter in a small saucepan over medium low heat, add Flour and stir. Add Milk, bring to the boil, stirring constantly, until mixture thickens. Lightly season with Salt and Pepper.

Place Oysters on the half shell on a baking tray using foil to stabilise the shell.

Cover each Oyster with 2-3 teaspoons White Sauce.

Add some grated Cheese.

Bake for 12-15 minutes OR until nicely browned. Sprinkle with finely chopped Parsley and freshly ground Black Pepper, and enjoy.
