Steps

Firstly heat oil in a pan and deep fry potatoes and baingan until it become soft. Keep it aside.

Now make a smooth paste with tomatoes, ginger, garlic, green chillies, fenugreek, peanuts.

Now in a same pan heat 2 tblspn oil and put this paste into it.

Cook for 5 minutes then add aloo baingan, salt and some water, as according you want consistency of gravy, and cook for 7 to 10 minutes.

Add garam masala and turn off the flame.

Aloo baingan masala is ready. Garnish with fresh coriander.
