Lemon Shortbread Cookies

Preheat the oven to 150°C.

Whisk the Margarine and Sugar until light and fluffy.

Mix in Egg Yolk, Lemon Zest, Salt, and Vanilla Essence until combined.

Mix in the Flour until combined.

Roll the dough into balls and flatten it on the baking sheet.
- 6
Whisk egg white until frothy. Brush top of the cookies with the egg white. Sprinkle the Sprinkles over each.

Bake for 25 to 30 minutes
