Aloo Gobi Matar (Potato, Cauliflower, and Pea Curry)

First, peel the potatoes and shell the peas. Cut the cauliflower into florets. In a pressure cooker, heat the mustard oil.

Add the fenugreek seeds and asafoetida. Then add the ginger-garlic paste, turmeric, coriander, and chili powder. Sauté well, then add the chopped and washed vegetables.

After 2 whistles, add chopped cilantro. Your Aloo Gobi Matar is ready to serve.
