Kefta (Almond Pastries)

Use a food processor to grind the almonds until they are as fine as flour, then sift them through a strainer.

In a mixing bowl, combine the measured finely ground almonds and powdered sugar. Mix well with your fingers.

Meanwhile, prepare the syrup to bring the almond dough together: combine 2 parts water and 1/2 part granulated sugar in a saucepan and boil for 10 to 15 minutes.

Gently add the syrup to the almond mixture until you get a soft dough that forms a ball. Shape the dough as you like using any cookie cutter, or fill it with sponge cake and cut into diamond shapes.
