Banger Pumpkin and meat sauce 🇮🇹 🇮🇳

This was a New year’s banger with my international community in Italy. A few tweaks here and there made it pleasantly diverse and delicious 🤤 . We had this sauce with tagliatelle pasta made from scratch and I’ll be sure to share that recipe too later on 😉

Peel and cut pumpkin into cubes. Transfer to a pot, cover with water, season with salt and boil until tender. Drain and reserve pumpkin water if you need it to cook pasta or might need it if the final sauce turns out dry. Mash pumpkin and set aside

Heat oil in a large saucepan, sauté garlic and ginger until soft and fragrant (but not burning). Add leeks and cook stirring until soft and most of the liquid has evaporated

In another pan, heat oil and add the minced beef. Cook stirring until no longer pink and keep cooking to fry it to brown and crisp (it will regain moisture later on when you add it to the pumpkin mash - you need it crisp at this stage to retain a vibrant color)

Combine mashed pumpkin, beef, leeks, garam masala and soy sauce. Cook a little longer (about 2 minutes) for flavors to incorporate. Season as needed

Serve with pasta and Enjoy 😊
