Chicken Sarciado
My parents' recipe which I tweaked a bit
Steps
- 1
Cut chicken to desired smaller sizes, potato and carrots to cubes, garlic and tomatoes and onion to saute size.
- 2
Saute garlic, onion, and tomatoes.
- 3
Add chicken and fish sauce, pepper, (and magic sarap or knorr). Careful with the fish sauce as it's salty. Some might find that they don't need to add salt at all. Saute the chicken as well.
- 4
Add water to completely submerge chicken and let it boil.
- 5
Drop carrots, let boil, then potatoes and let boil.
- 6
Taste soup. Add salt if needed. Check if potatoes are cooked.
- 7
Dilute 1 tablespoon of cornstarch in a bit of water then add to soup. Let boil until soup thickens.
- 8
Serve.
