In a large pot, add the mirepoix (onion, carrot, celery) with a little olive oil. Once the vegetables are softened, add the chicken pieces and season with salt.

When the chicken is browned, pour in the red wine to deglaze.

Add the peeled tomatoes and cook for 1 hour.

Shortly before the end of cooking, add the sage, rosemary, bay leaf, and black olives.
