Egg Palak

As we are in peak of winters and Spinach is such a great veggie that we all should try to increase the intake of this green vegetable as much as possible in this season.
So keeping this in mind I prepared an egg preparation along with spinach and named as “Egg Palak “
Egg Palak is a wonderful and perfect servev for main course.
Spiced eggs are resting on a green, thick and creamy bed of spinach gravy and this delicious curry has been served with crisp and flaky Malabar Parotta .

Steps

Wash spinach very nicely and blanch it, wash coriander leaves and keep aside.
Make paste of blanched spinach + coriander + green chilli and keep aside. - 2
Slice onion, chop tomato into cubes, slit green chilli and make paste of ginger garlic.
Boil eggs, remove shell, make few slits on eggs, marinade with salt and keep aside.

Assemble all spices and keep all ingredients ready. Make paste of Tomato also.

In pan add oil +butter, let it heat then add cumin seeds, cardamom, cloves, pepper corns and let cumin crackle, then add onion and sauté for 2-3 minutes under medium till it sweats and turn pinkish.

Now add ginger garlic paste and sauté for 3-4 minutes to get off the rawness from ginger garlic.

Now add tomato paste along with little water and sauté for 1-2 minutes, then add all spices + salt except garam masala. Stir fry for few minutes till water evaporates and all spices fries well, masala will leave oil.

Now add spinach + coriander paste into it and cook for 4 - 5 minutes. If required then add water

Now add garam masala, Malai, sugar, check for salt, mix nicely and then add boiled eggs.

Simmer for few more minutes and check for consistency and lastly add 1/2 tsp Kasuri methi and simmer for 1-2 minutes and its ready.
Cut eggs into halves and garnish with tomato / onion and serve with paratha/ naan / kulcha.
