Mix the egg whites with the sugar, then gently fold in the sliced almonds with a fork. If possible, prepare this mixture 2 days in advance and stir it morning and evening so the almonds soak up the syrup.

Dice 3 apples and sauté them with the maple syrup and a little butter. Let cool.

Dice the remaining 2 apples and add them to the cooked apples. Mix well.

Line a tart pan with the pie dough. Spread the apple mixture over the dough and top with the almond mixture. Bake for 35 minutes at 350°F (180°C).
