Palak/Spinach leaves, a winter season leafy vegetable is full of vitamins, micronutrients and antioxidants, needed for our body. To make this dry curry more nutritious , delicious and healthy, I included some veggies also. It's flavorful, tasty and healthy too.

Palak/Spinach leaves, a winter season leafy vegetable is full of vitamins, micronutrients and antioxidants, needed for our body. To make this dry curry more nutritious , delicious and healthy, I included some veggies also. It's flavorful, tasty and healthy too.

Heat the oil in a pan, add mustard seeds and allow to splutter. Add and saute minced garlic, chopped onion dry red chilli and green chilli till atomic and onions become translucent.

Add chopped tomatoes and saute till softer. Mix chopped brinjal and pumpkin, fry till half cooked. Add chopped palak saag and potatoes. Mix well.

Adjust the salt required and mix. Serve the delicious palak saag and veggie dry curry with steamed rice and/or roti.
