Steps

Peel the outer skin of potato. Make very thin slices of potato. Use this slices immediately to cook sabzi otherwise it will turn black.

Heat pan. Add oil. When oil is heated, add mustard seeds. When mustard seeds splutter, add cumin seeds, asaefoitida, curry leaves and thinly slices of potato.

Add turmeric powder, red chili powder and garam masala. Mix it all. Sprinkle little water. Cover lid and cook for 15 minutes or till all potatoes are completely cooked.

Stir occasionally otherwise potatoes will stick to pan. Lastly add salt.

Serve with hot chapatis or with dal rice.
