Egg Methi Matar Malai

Winter calls for fresh and green leafy vegetable and Methi / Fenugreek is one amongst them.
Methi is known for its distinct aroma and bitterness but Egg Methi Matar Malai is a wonderful recipe which cuts off bitterness beautifully and bursts will flavour.
Along with Methi, Green Peas / Matar is another popular winter vegetable which is highly nutritious, so have combined both this winter vegetable along with Egg and the outcome is Egg Methi Matar Malai .

Steps

Assemble ingredients, prick eggs and smear with slight salt, keep aside.

Finely chop Methi leaves

Make paste of chopped onion + cashews + garlic + ginger + 2 green chilli and keep aside.

In moderately heated pan/ kadhai, add 1 tsp Oil and shallow fry eggs til golden brown and keep aside.

In same pan add 1 tsp oil and fry finely chopped Methi by adding slight salt and fry till water from Methi leaves evaporates and leaves shrinks. Keep aside.

Now add ghee + remaining oil and allow to heat, add cumin seeds + whole spices and allow to crackle, then add onion paste + 1 green chilli + 2-3 tbsp water and sauté for 3-4 minutes till the masala paste cooks well.

Add whisked curd + salt and sauté for around 2 minutes under high flame. Then add Coriander powder + garam masala powder and sauté for 3-4 minutes till moisture evaporates.

Masala is cooked well.

Now add Methi leaves + green peas + 2 tbsp water and sauté for around 2 minutes.

Now add milk and wait for a boil. Cook for 2 minutes under low to medium heat.

Add eggs + Kasuri Methi + special roasted masala + sugar and cook for 2-3 minutes under low to medium heat.

Add cream and stir well, cook for around 2 minutes.

Keep in stand by mode for 2-3 minutes and dish is done.

Serve with Paratha / Naan / Kulcha / Jeera Rice or Pulao.
