Cooking Instructions

Soak the chickpeas for about 8 hours or overnight, then rinse and drain them well.

Simmer the coconut cream until it separates.

Add the Massaman curry paste to the separated coconut cream and stir-fry. Then add cinnamon, star anise (to taste), and roasted cardamom pods. Stir until fragrant, then add the chicken and stir-fry until cooked.

Add the coconut milk, reduce to low heat, and simmer until the chicken is tender.

Season with fish sauce, tamarind paste, and coconut sugar. Add the potato and chickpeas (Heritage brand) and continue to simmer. When the potato starts to cook, add the red onions and simmer for another 30 minutes. It's ready to serve.

An easy main meal.I really like the curries with coconut milk, plus this just used regular old yellow curry powder (English curry I believe). I used some left over rice, and it's more wait for it to cook, than real work. Heat level is adjustable to your preference. Plus you can use other proteins like shrimp or tofu if you desire.
