Baked Cauliflower Frittata 😋

Cut the cauliflower into medium florets, then parboil in salted boiling water with cumin. Drain well and set aside.

Take a baking dish, preferably non-stick, and add a tablespoon of butter or oil as desired. Sauté the onion until golden, then add the tomato and cauliflower florets. Sauté until well coated with the fat.

Add salt, black pepper, and cumin, then let the dish cool completely.

In a bowl, mix the eggs with minced garlic, fresh cilantro, and dill.

Dissolve the flour with baking powder and baking soda in 1/2 cup milk until smooth, then add to the egg mixture along with salt, black pepper, cumin, and ground coriander.

Pour the egg mixture over the onion, tomato, and cauliflower in the baking dish. Mix well. You can add cooked ground beef for extra flavor.

Bake in the oven at 350°F (180°C) for 15 minutes.

For the final step, add mozzarella cheese on top and bake for another 5 minutes until the top is golden. Enjoy!
