Here is a simple yet fulfilling meal. I love potatoes, fried, mashed, boiled etc. This one is mashed potatoes but with a twist,
balsamic glaze. If you prefer eating meat, lamb racks are amazing company to the mashed potatoes.
I like to use existing materials and I'm a lazy cook. So this recipe can be slightly adjusted if you've guests over.

Ingredients

2 people
  • Potatoes, any kind that you can fill a bowl
  • 1/2 glassmilk
  • 1/3 glasshalf cream
  • Lots of butter 😈
  • 1lamb rack (4 pieces per person for a party of two)
  • Lots of salt
  • Real garlic OR garlic powder
  • Italian seasoning

Steps

  1. 1

    First start with peeling potatoes and cut them half. Dont perfectly peel them, leave some skin on.

    Once potatoes are done, put them on a baking sheeted tray. Spray or drizzle some olive oil salt them. Add the peeled garlics, if not garlic powder. Bake them for about 15 mins ontil the outer edges are brown and your potatoes are soft.

    In the mean time, totally optional, season your lamb with salt (dont be shy), garlic powder and italian seasoning. If you got the time you can rest them in the fridge. Otherwise, you can start with cooking the lamb.

    If YOU CAN, use a cast iron skillet for quickly frying the rack. If not, use a skillet it's fine. Add approximately 1/8 of unsalted butter, add some herbs (if handy any), or italian seasoning snd garlic. Then once oil is heated (not boiled) place the racks. Cook all 4 sides for about 3 mins. You can use a tong to do it.

    Get your potatoes out of the oven. Put them in a bowl and mash them. You can use a regular fork or a masher. I kind of placed the racks on the same baking sheet of the potatoes (after removing potatoes). Pour the butter on the pan to the baking tray. Then bake it at ~200 C degrees for 45 mins.
    💡: If you want to have fully cooked lamb, you can fork the lamb before putting it in the oven.

    Your lamb is in the oven. Great, time to take care of your potatoes. Rinse the lamb rack pan quickly, then melt some more butter. Add your somehow mashed potatoes, slowly pour in the milk and heavy cream. As you're pouring, fold your potatoes continously (kind of sterring it)

  7. 7

    This part is optional, but if youre interested in some surprise, sweetness in your mashed potatoes than add some balsamic glaze into it and give it a stir). You can as well add some grated orange peels. Sounds odd, but it is really tasty.

  8. 8

    Check your racks and make sure your potatoes are ready. Serve it as you will. If you're looking for a wine pairing, you can go for a Pinot Noir 🍷
