Assemble ingredients, lightly steam Cauliflower, green peas, beans and keep aside.

Wash flatten rice very nicely and keep in colander to drain excess water. Fry peanuts till golden brown and keep aside.

In moderately heated pan add oil, add mustard seeds and allow to crackle, then add ginger + curry leaves and sauté for few seconds.
Then onion + capsicum and sauté for 2 minutes, then add all steamed vegetables + salt + turmeric and sauté for 3-4 minutes. - 4
Add soaked poha and mix gently.
Add sugar, mix and simmer for 2-3 minutes.
Lastly squeeze lemon juice and mix well, POHA is ready. - 5
Garnish with peanuts, Sev and serve hot hot.

Pair either with tea / coffee and enjoy winter breakfast.
