Mixed with king of vegetables and urad daal badi it tastes delicious, to go with roti or plain rice. In Orissa this is a favourite side dish with Pakhala.

Wash and chop the greens. Cut brinjals into small chunks. Cook brinjals and greens with a cup of water until almost cooked.

In the mean time roast the badi in little oil till brown. Crush them to small chunks.

In a pan, heat oil, add mustard seeds, red chilli and garlic. Cook for a minute and then add chopped tomatoes. Let the tomatoes get mushy, and then add the boiled saag and brinjals. Mix well, add salt as per taste. Mash the brinjals little more with the spoon.

When it’s almost done, add the roasted crushed badis and mix well. Switch off and serve hot.
