California Farm Dried Rose Hip Jam

I use unsweetened frozen apple juice to make a small, 8 oz cup of mason jar Jam from my rosehips. After this jam is cooled, I add agave syrup or manuka honey if I want a sweeter jam.

I use unsweetened frozen apple juice to make a small, 8 oz cup of mason jar Jam from my rosehips. After this jam is cooled, I add agave syrup or manuka honey if I want a sweeter jam.
Steps

Boil dried rosehips in concentrated frozen apple juice with two lemons till rosehips sink to the bottom, cool. Discard lemons.

Run rosehips through foodmill with fine sieve to remove the hard seeds. Beautiful jam!

Put rose hip puree back in apple juice with Tbs unsalted butter, bring to boil. Add Tbs gelatin,stir, bring to boil. Cool, taste. Add honey or agave to taste.
