Foolproof Soft-Set Eggs

Homemade soft-set eggs are really best with this method. Put one on hot rice with a little soy sauce! Delicious!!

A thick-sided pot is best for this dish! If you can let the eggs rest after taking them out of the pot for 4 minutes, they'll be perfect!

My son and daughter both moved out recently, so it's just my husband and I...but you can make just 2 of these, and they'll come out fine. But recently I make 4 at a time and keep 2 in the refrigerator to use the next day. For 4 eggs. Recipe by Tankotankichi

Ingredients

4 servings
  1. 4Eggs (medium to large)

Cooking Instructions

  1. 1

Bring 1 liter (5 cups - 1000 ml) of water to a boil in a pan with a lid.

  2. 2

When the water comes to a boil, take it off the heat and add 200 ml (1 cup) of water, and put in the eggs. (You can put them in straight from the refrigerator.)

  3. 3

Now just wait with the lid on for 12 minutes! In the winter 13 minutes seems to work better!

  4. 4

After 12 minutes, take the eggs out right away and let them rest for at least 3 minutes. Break them open gently as you would with raw eggs.
