Milky pilaf with salty fish

Spring is coming!
This is my one of the most beloved dish that my mum cooks. Usually we make it for every Nowruz holidays in Azerbaijan 🇦🇿 (Spring coming) when it's still cold outside but you can smell freshness of spring air.
I am sharing this recipe so you can also cook and taste it in this upcoming Spring whine it's still cold outside :)

First and the foremost, wash your rice!

Put water, milk and rice into the pot. Add salt, sugar and turmeric as well.

After boiling the water, we turn heating to low fire and stir occasionally.

Once the liquid will be evaporated, put 200g of butter for 20 minutes. Close the pot with lid.

Put persimmon, raisins, dried apricots, 50g of butter and 0.5 tbsp. water into another pot. Fry until the water evaporates. It will be shiny ✨

Wrap the fish in foil and put in the oven for 30 minutes at 250°C. After that, just clean from the skin and bones.

This is how it looks like! Ideally, better to cut fish parts into smaller pieces and mix with pilaf.
