Yummy Matumbo Stew w/ rice or Ugali accompaniment

In a pressure cooker pan over a hot fire drizzle in oil, and add the crushed garlic and chillies. Cook for 3 mins until the chillies are well cooked. Add your sliced onions and stir the mixture and allow to cook until the onions are semi golden brown.

Now add in your cube sliced capsicum, drabble the ingredients with lime juice and stir until cooked well.

Now add your tomatoes and cook to paste and thereafter throw in your crushed roiko cubes. Cook to paste.

Throw in your sliced to desired sized matumbo, add 500gm of water, stir the mixture and place whistling lid. Shut and cook for 15 mins after the first pressure whistle!

Once the 15 min time elapses, turn off the heat, remove the pressure cooker from the hot stove and settle it on a cool surface to depressurize. It takes approx 15mins to cool. Open the lid, stir to mix well and serve with your favorite accompaniment. Busuma (Ugali) or rice is highly recommended balebe! 😋
