Red Amaranthus Leaves are known as Laal Maat and are available aplenty in Winters and even after the Season. Infact there are many Leafy Greens that are easily available throughout the Year due to Organic farming using many new techniques like Hydroponic and Naturoponic cultivations.
This simple dish does not require many spices and still tastes equally great.
It goes absolutely well with some freshly boiled Rice and Poppadoms or even Ghee, Chutneys or Pickle as well.

Heat oil in a kadai. Add cumin seeds. Let them splutter for a minute. Now add and saute sliced onions on a low heat along with ginger garlic green chilli paste. Let the raw smell fade away before you add the turmeric and chilli powders. Next add chopped tomatoes and cook until done.

And finally add the red amaranthus leaves. Mix well and cook on a low heat for just about 8-10 minutes. It does not take much time. Adjust salt and take it off the heat.

These are to be cooked taking only the leaves of it and leaving the stems aside. Wash them thoroughly under running water before use. That's it.

It's a simple dish made with simple pantry staples. Enjoy it alongside rice or rotis. It tastes yum with some papad and achar as well. Enjoy!
