These homemade Chicken Chunks are versatile and can be used in a number of ways to bring diversity to your iftar table.
Slice the baked chicken mixture or cut into cubes, whatever suits you to make pizza, burgers, rolls, salads, wraps, sandwiches or even in noodles.

These chunks are better than nuggets, in my opinion, and easy to put together. Just process all the ingredients in a chopper and spread it out in a dish. Bake for 15 minutes and when cool enough to handle, cut into cubes or strips and use however you like.
These chunks are crisp on the outside, and juicy and tender inside. They are freezer-friendly too so double the batch and store any extras in the freezer. Can be frozen up to 3 weeks in airtight container.

Ingredients

35 minutes
4-6 servings
  • 2 slicesbread
  • 1/4 cupmilk
  • 1/2 kgchicken, boneless, cubed
  • 1onion, chopped
  • 2 tbsp.cilantro, chopped
  • 2green chillies
  • 1egg
  • 1 tbsp.chicken tikka masala
  • 1 tbsp.ginger-garlic paste
  • To taste, salt
  • To taste, chilli powder
  • 1/2 tsp.baking soda
  • 3 tbsp.oil, divided

Steps

35 minutes
  1. 1

    Preheat oven 320 F.

  2. 2

    In chopper, add all the ingredients with 2 tablespoon oil, chop until well combined.

  3. 3

    Grease dish with 1 tablespoon oil and add prepared chicken mixture and press it evenly.

  4. 4

    Cover and bake for 10-15 minutes or microwave (medium power) for 10-12 minutes.

  5. 5

    Let it cool and cut into square cubes.

  6. 6

    To use the cubes, heat some oil in a frying pan and add the chicken chunks.

  7. 7

    Stir fry until golden brown.

  8. 8

    Remove and use for chicken salad, or wraps or as is.
